Everyone has tried normal black pepper, but not as many has experienced the white, & even less the green or pink.
All four have a very distinctive taste on their own, so being smoked, the process enhances the flavour even more. Dried black peppercorns have been used since antiquity for its spiciness due to the chemical piperine. White pepper is actually the seed of black pepper, with the darker coloured skin of the pepper fruit removed. Green peppercorn retains its skin, whilst pink peppercorns aren’t in fact peppercorns, but come from a different plant family altogether.
